GRAVITY-FLOW WINERY DESIGN
Our philosophy is based on respecting natural processes with the lowest intervention and grape handling possible, thus producing a net wine that synthesizes flavors typical of Patagonia.
The winery has a 300,000 liter capacity and is located in the highest part of our facility, allowing us to naturally embrace gravity flow. It has state-of-the-art technology designed to tend and care for the process from the grape to the finished product.
We hand-pick our grapes. The fruit is then kept at low temperature, followed by a double selection process, pressing, and then gravity moves it to fermentation tanks. This helps preserve the grape’s organoleptic properties in a gentle process.
The barrel room for wood and bottle ageing has the perfect temperature and humidity conditions. Both French and American oaks are used, which combine to bring out the best in each wine.
